Lemon and Orange were the first that I tried and today was Pink Grapefruit, so far my favourite, next time Lime and I'm trying to think of a way to do Pineapple. I've also thought of mixing flavors, I'll keep you posted.
I know, I know the word Soufflé makes this sound difficult and labor intensive but trust me it is nothing of the sort.

Ingredients:
- 2 eggs, separated
- 3/4 cup buttermilk (I use whole milk)
- 3 teaspoons fresh lemon zest (or other citrus)
- 2 tablespoons fresh lemon juice (or other citrus)
- 1 teaspoon vanilla extract
- 2 tablespoons butter, melted
- 3/4 cup all-purpose flour
- 1 teaspoon baking powder
- 3 tablespoons powdered sugar (regular sugar can be used if needed but I've never tried it)

Bowl 1
- Sift together: Flour, Powdered Sugar, Baking Powder, Salt. Make a well in the middle.
Roll lemon between the counter and your hands until soft, then microwave for 30 seconds.
Bowl 2
- Melt butter, add zest, fresh juice, vanilla. Mix
- Add milk and egg yolks
Bowl 3
- Whisk egg whites until they form soft peaks, ones that stand up with a curl on top.
Bowl 1
- Sift together: Flour, Powdered Sugar, Baking Powder, Salt. Make a well in the middle.

- Melt butter, add zest, fresh juice, vanilla. Mix
- Add milk and egg yolks
Bowl 3
- Whisk egg whites until they form soft peaks, ones that stand up with a curl on top.
Add Bowl 2 wet ingredients to Bowl 1 dry and mix well.
Fold the egg whites from Bowl 3 into Bowl 1.
Spray the pan or use a non-stick pan and add the batter.
These make great light and fluffy waffles too.
In both cases I found they cooked faster than regular pancakes or waffles.

Toppings:
Honey and fruit like strawberries and blueberries are great, sprinkled with powdered sugar.
Regular butter and syrup and yummy too.
I like them plain.
