I continually check out Pinterest for not only yummy breakfast ideas but quick easy ones too. I found this one a while back and finally tried it this morning and I'm so happy I did!

2 ripe bananas
4 eggs
1/4 tsp baking powder (optional)
Mix in a blender, food processer or with an immertion blender until smooth.
I've also seen using these in place of the eggs:
- egg substitutes
- silken tofu
- flax eggs (1 tbsp ground flax & 3 tbsp water, refrigerate for 10 min)
- I can't say how they work or taste but it never hurts to try. If you do please comment for others.
